BOURGOGNE - PINOT NOIR 2007
Terroir
This cuvée is issued from a blending of Pinot Noir from various Burgundian origins, mainly from villages of the Côte de Beaune (Aloxe-Corton, Ladoix, Savigny and Beaune). Soils are all argilo-limestones with a dominant of clayey marl because located in the Côte de Beaune. The plots of land are rather situated at the bottom of hillside and in plain. Vineyards are on average 40 years old, in other words in full strength of the age!

Our oenologist's comments
Ruby color with reflections garnets which testify of its youth. It is brilliant and limpid thanks to a light filtration before the bottling. This last one took place after 10 months of aging in stainless tub for 70 % of the vintage and in oak barrels for the remaining 30 %. This blending of Pinot Noir from Côte de Beaune and Côte Chalonnaise reveals then a charming simplicity and a lot of greed. Indeed, the nose is rather explosive on the fruit: strawberry, currant, bilberry and cherry. Tannins are pleasant and softened without hang on. A small point of candy in the middle of mouth gets involved with aoky vanilla one discreet which persists at the end of mouth. This wine can be drunk within 2 years if we want to take advantage of its fruity character and easy to drink. Those who want to wait for it, could then find the aromas more « compotés » of stone fruits, crisis Morello cherry who are not either to displease us!
Sommelier's advice
This wine will merge very well with a varied buffet of hors d'oeuvre, fine cooked pork meats, as well as on a poultry or a grilled piece of beef. Also think of cheeses, such as a goat of Maconnais.
