GEVREY-CHAMBERTIN 2007
Terroir
Gevrey-Chambertin is a village along the coast of the Cote de Nuits area. It is surrounded by several hills where some of its "1er cru" are located: Lavaux, St Jacques... The grapes of this wine come from the blend of different parcels: a few of them are in the bottom of the slope including a soil within a large proportion of clay and limestone; and another part of them are higher on the slope, more pebbly and within an excellent natural draining.

Our oenologist's comments
This wine has a beautiful ruby color with a nice neatness and brilliance. The aromas are intense and fruity, very typical of this appellation: black cherry, licorice, blackberry... Thanks to an ageing in French oak barrels for 15 months (30% of new oak), the toasted notes and tannins are well mixed. The attack on the palate is strong and concentrated with a great level of acidity. The tannins give a dense structure and a powerful texture but without any astringency. They finish on a nice roundness and the length reminds an harmonious red fruits touch. Thanks to is nice level of acidity, this fruity wine is ready to age softly and gently in your cellar with the guarantee of great tasting qualities in the coming 4 to 8 years.
Sommelier's advice
It will accompany a red meat, such as beef roasted in a pastry case or even a carpaccio, also a white meat roasted and his juice as well as freshly collected mushrooms. Of course, the Époisses cheese could also ideally match because it is all the same a powerful wine !
