Our oenologist's comments
This wine has a dense and black cherry colour with purple reflections. The robe is brilliant and limpid. The nose expresses himself on notes of black fruits, nutmeg and dye purple. It opens then on aromas of grilled hazelnut and gingerbread, coming from an ageing in French oak barrel (35 % new oak). After 18 months in oak, then the wine settled in tank during 1 month in order to avoid any filtration, except just before the bottling. In mouth, the tannins are very present on the attack, with a rich texture. Tannins are still a little bit firm, what can surprise for the Appellation Volnay, but we have to keep in mind that "Les Santenots" is a Premier Cru located on a dense and deep clay which is found in the wine. The flavours are sweet and faithful to the nose which makes the final smooth and more supple than the attack. The length is persistent, on the fig with some tannins that are promising for the ageing of the wine. It is thus a wine that can be kept a little but also be enjoyed from 2011-2012, and beyond, of course.

Couscous or Tajine with meat, games birds in salmi, cheeses such as Saint Marcellin or Epoisses, dessert such as chocolate cake.
